Only Taggiasca olives, harvested and processed on the same day, carefully hand-selected. The olives are washed for one month using only water, then continue their fermentation in brine, to which we add thyme and bay leaf.

Once ready, they are hand-pitted and preserved in our Taggiasca extra virgin olive oil.
