Made with Taggiasca olives only, harvested and processed on the same day, and carefully hand-selected. After harvesting, they are thoroughly washed using only water and then left to slowly ferment in brine, together with thyme and bay leaves, following a natural process that preserves their character.

Once ready, the olives are pitted and peeled, then finely ground to obtain a pâté with a smooth and intense texture. It is preserved in our Taggiasca extra virgin olive oil, which protects its aromas and enhances its flavor.
