Only Taggiasca olives, harvested and processed within the same day, carefully selected by hand.

After harvesting, they are washed for one month using only water and left to slowly ferment in brine enriched with thyme and bay leaf. Once ready, they are pitted by hand and left to dry for a long time, following a process that requires time and patience.

The rest is part of our recipe, which we keep discreetly. The result is incredibly crunchy, intense, and surprising olives.
