The inspiration comes from the seasoned olives typical of Southern Italy, Greece, and the Balkans, where every family has its own recipe. We chose to interpret it our own way, starting with the natural sweetness of Taggiasca olives and seeking a balance that enhances it without overpowering it. The result is a simple yet surprisingly versatile battuto. It pairs beautifully with warm bruschetta, pairs well with fresh cheese, adds character to a meat tartare, or transforms a pasta dish or a last-minute sauce. It's one of those products that end up on the table as an aperitif and then stays there until the end of the meal, passed from hand to hand.
